.:Mouth-Watering Wednesday - Corn & Black Bean Salad:.

My good friend Sarah shared this recipe with me, and it's been a favorite in our house ever since! It is great to eat as a salad, but our favorite way to eat it is with chips, like a salsa.


1 can black beans, drained and rinsed
1 can corn, drained,
6 oz. monterey jack cheese, cubed
1/4 c sliced green onions
1/2 c cilantro, chopped

1/3 c lime juice
1/2 c olive oil
1 clove garlic, pressed
1 t salt
1/8 t cayenne pepper

Combine first 5 ingredients. Whisk last 5 ingredients, pour over bean mixture, mix. Chill.
