.:Mouth-Watering Wednesday - Pizza Scones:.

My sister made these for us while we were visiting last week and they were tasty!

Mix 2 cups flour, 1/2 cup cornmeal, 1 tbsp baking powder, 1 tsp basil, 1/2 tsp oregano, & 1/4 tsp salt.

Then, using 2 knives, cut in 1/2 cup (1 stick) butter. (Or use pastry blender) cut until it resembles coarse crumbs.

Place 1/2 cup sun dried tomatoes in in med size bowl and pour boiling water over them & let stand for 30 seconds.

Drain water and stir in 1 cup shredded mozzarella cheese and 1/3 cup finely chopped pepperoni (or more).

Whisk together 2 large eggs & 3/4 cup buttermilk and add to tomato mixture and add all to dry ingredients until forms sticky dough.

Turn dough onto lightly floured surface and need about five times until it holds together. Divide in half and pat into 1 inch thick disk. Slice into four wedges.

Place on lightly greased baking sheet about 1 inch apart and bake at 375 for 15-20 minutes or until golden brown.

Serve warm with pizza sauce for dipping.

We thought they were good, but thought they would be even better if you added some cheese to the top before baking them.
