My husband loves eclairs. I am not such a fan. But I've been seeing this summertime version of the dessert all over the internet and decided to give it a try.
It was delicious.
Here's my take on it.
- 2 small boxes of vanilla pudding
- graham crackers
- 2 cans of frosting (I highly recommend the triple chocolate fudge with chips in it)
- 3 c milk for the pudding
- 2 T milk for the frosting
- 8 oz. Cool Whip
Mix your pudding with 3 c of milk.
Let it stand for five minutes.
Mix in Cool Whip.
Layer graham crackers in the bottom of a 9x13 pan. It's okay to break them up to fit.
Spread on a layer of pudding.
Mix 1 can of frosting with 1 T of milk.
Spread on top of layer of pudding.
Make another layer of graham crackers.
Another layer of pudding.
And another layer of frosting (mixed with 1 T milk).
Crush up some graham crackers and sprinkle on top.
Chill in the fridge for at least three hours.

I have a question, was it hard to spread the icing on the pudding? Would it work if I spread the icing on the bottom of the graham crackers then put them down?
