.:Mouth-Watering Wednesday - Candy Cane Whoopie Pies:.

Happy December!

I LOVE December and the Christmas season. The lights, shopping, music (which I've been listening to since October), the food - everything about it is just magical!

So in honor of December starting today, I'm going to share a great Christmas recipe - candy cane whoopie pies!



We made these last year for neighbor gifts, and they were a hit! Really, you won't even want to give them away, so be sure to make extras for yourself!

Here's what you need:

Cake mix
1/2 c. oil
2 eggs
frosting
crushed candy canes
peppermint extract
Andes baking bits (optional)

Pre- heat your oven to 350.

Mix your cake mix, oil, and eggs.

Stir in your baking bits. (I LOVE these candy cane bits!)

Put scoops of dough on your cookie sheet.

Bake for 10-12 minutes.

Let your cookies cool completely before adding frosting!

I mixed peppermint extract and red food coloring into my canned vanilla frosting. I just add extract to taste.



Frost one cookie and then roll the edges in the crushed candy canes.

Add your other cookie on top.

DONE! And delicious!

I also made another batch with just regular Andes baking bits - not the candy cane ones, but the chocolate and mint ones. For those, I used chocolate frosting instead of the peppermint frosting, and still rolled the edges in candy canes. Yum!

You can put all of your goodies on festive paper plates, or you can make these fun charger plates using a little bit of vinyl. I think they add a nice touch!

  7. Those are delicious looking! This is my favorite time of year, partially because of all the peppermint. I am definitely adding this to my recipe book!
