My friend shared this recipe with us, and it is a fave in our house! I'm not a huge soup or chili person in general, but I LOVE this!
6 15 oz. cans Great White Northern Beans
6 c cooked, diced/shredded chicken
2 t Cumin
5 c chicken broth
2 medium onions - diced (we leave these out)
2 4 oz. cans chopped green chilis
1 1/2 t oregano
1/2 t red or Cayenne pepper
1/2 t pepper
24 oz. tub sour cream
1 can white corn
Boil onions in broth for 15 minutes. (We obviously skipped this step since we aren't onion people!)
Add all ingredients except sour cream.
Simmer for one hour.
Fold in sour cream.
** Our alterations to this recipe is that we don't add onions, as I've mentioned. We also don't fold in the sour cream. I don't like sour cream. So for my husband and daughter, we just mix it into their bowl of soup. We also cut up some cilantro and topped our soup with that, and it was delicious!
This recipe makes a TON, so you could easily halve it if you didn't want tons of leftovers!
