.:Mouth-Watering Wednesday - Summertime Cucumbers:.

We have been eating this in my family as long as I can remember. It's always a signal of warm weather and good times when these come out.


Plus, they are super easy!

Peel and cut as many cucumbers as you want.

Cover them in a bowl with about equal parts of water and vinegar, or if you're like me and like a little extra kick, slightly more vinegar. Taste as you go!

Add a bit of pepper, and then let them marinate in the fridge.

Enjoy with some sausage and onion soup potatoes, and you have yourself one delicious meal.


The only that is missing is watermelon!

  1. Looks delish! I put just a tiny bit of finely chopped onion in my cucumber & vinegar dish. I don't use water though. Has a real kick to it!

  4. Yummy! We make the same cucumbers only we add onions. I planted some cucumbers in hopes of having this dish all through the summer. Can't wait until they start growing!

  5. This is a fave at our house too! And if you have em on hand I toss in onlion slices and tomato wedges.....you can't go wrong with this it taste great no matter what
