Crunchy Romaine Strawberry Salad - Love Grows Wild

Hello again! I'm Liz from Love Grows Wild, and I'm back with another delicious recipe to share with you! After last month's decadent Apple Turnover recipe, I thought I'd lighten things up a bit and show you the salad I've been obsessing over lately: Crunchy Romaine Strawberry Salad. It's fresh, flavorful, and perfect for Summer!

I have to admit, I LOVE food, and it's not always the healthiest of things I'm eating. Pizza, pasta, ice cream... you get the picture! So to try to avoid that muffin top that keeps sneaking up on me, I eat pretty healthy most of the time. Salads are an easy healthy meal option, and I love adding lots of fresh ingredients with different flavors and textures. Who wants just a plain iceberg lettuce salad when they can have all this?

For this salad I use romaine lettuce and toss in green onions, mouth-watering strawberries, and a crunchy topping made from walnuts and broken ramen noodles browned in butter. It may sound strange, but I'm telling you the crunchy noodles and walnuts are the star of this salad! Aside from the strawberries of course. Is there anything better than fresh strawberries this time of year? They're almost too pretty to eat!

For this salad I also make my own dressing, which is super easy if you've never done it before. It only uses 4 ingredients, and you probably already have them all in your pantry! The dressing has just the right amount of sweetness and pairs perfectly with the strawberries.

This salad is great to take to parties! It looks so pretty with all the bright colors, and you can prepare all the ingredients ahead of time and simply toss it together when you get there.

Each bite of this salad has an amazing variety of textures with the soft, sweet fruit, crunchy walnuts and noodles, and crisp romaine lettuce. You'll never get bored with this salad!

Crunchy Romaine Strawberry Salad
1 package ramen noodles
1 cup chopped walnuts
1/4 cup butter
1/4 cup sugar
1/4 cup canola oil
2 Tablespoons red wine vinegar
1/2 teaspoon soy sauce
8 cups torn romaine lettuce
1/2 cup chopped green onions
2 cups fresh strawberries, sliced

Discard the seasoning packet from the ramen noodles (or save for another use). Break the noodles into small pieces. In a large skillet, cook noodles and walnuts in melted butter over medium heat for 6 minutes or until golden brown. Make sure you stir frequently so they don't burn! Remove from the heat and cool. 

For the dressing, in a small bowl whisk together the sugar, oil, vinegar, and soy sauce until well combined. Just before serving, combine the romaine, green onions, strawberries, and noodle mixture in a large bowl. Drizzle with dressing and toss gently.

  3. This is a different twist on salad with strawberries, the ramen noodle and walnut topping sounds really good, can't wait to try!

  4. Tried this salad last night and it was a huge hit. I did make two additions – feta cheese to the salad, and instead of discarding the ramen seasoning packet, I added it to the dressing.
