Pesto Egg Salad Sandwiches - Love Grows Wild

Hello again! It's Liz from Love Grows Wild, and I'm back with another delicious recipe to share with you! When temperatures heat up in the Summertime, I like meals that are light and don't require me to turn on the oven. Quick and easy sandwiches are perfect for hot Summer days, and egg salad is one of my favorites! I put a new spin on the classic salad with the fresh, herby flavor of pesto. These Pesto Egg Salad Sandwiches are even better than the original and sure to become a lunchtime favorite!

Pesto Egg Salad Sandwiches

After a hot day of working in the garden, enjoying the pool, or playing with the kids outside, the last thing I want is to come home and slave over a hot stove. I love egg salad because I can hard-boil the eggs ahead of time and have dinner whipped up in no time. Normal egg salad is delicious, but the addition of pesto takes it to a whole other level! Just a few teaspoons of the bright green pesto is all you need to add the perfect amount of herb flavor without overpowering the salad. I usually have a jar of pesto on hand to use for this recipe, but feel free to make your own fresh pesto with herbs from your garden! 

Pesto Egg Salad Sandwiches

I like to dice the eggs into big chunks and spread a nice, thick layer of the salad onto hearty whole wheat bread. My boys eat their sandwiches just like that, but I like to add lettuce and onion slices to mine! Now THAT'S a sandwich!

Pesto Egg Salad Sandwiches
1/2 cup mayonnaise
4 teaspoons pesto
1/4 teaspoon salt
1/8 teaspoon pepper
6 hard-boiled eggs, chopped
8 slices of bread

In a small bowl, combine the first four ingredients. Gently stir in the eggs. Spread mixture over four bread slices and add desired toppings such as lettuce, tomato, or onion. Top with remaining slices of bread. 

- Serves 4 
- Make it healthy! Try a healthier version of this sandwich by using fat-free mayonnaise, whole wheat bread, and removing the yolks from 3 of the eggs.

This a great recipe to keep around after Easter when there is an abundance of boiled eggs. But don't wait till then to enjoy this sandwich! Give it a try for lunch tomorrow!
